So it’s that time of year when everyone seems to mutually fixate on the concept of losing weight, cleansing and detoxing their bodies and shedding the excess pounds acquired over Christmas break. Whilst to begin with everyone I know says and does all the right things, the repetitive and seemingly boring foods eaten during this time lead ultimately to failure, reverting back to bad food habits and unhealthy choices.
I totally get this. Salad is BORING and most of the time we are so used to cooking foods that are less healthy that when it comes to thinking up new and exciting recipes, it seems hard and time consuming – especially when convenience pre-packaged foods are right at our fingertips.
Living with a chef, my life has totally revolved around food and where to find it. I have lists as long as my legs (which OK, aren’t actually that long but you get the point), of where to eat for the best sandwich, where to eat for the best soup, where to eat for the best burger etc… Whilst it can be painful sometimes to find somewhere appropriate to eat for MR Fancypants-the Chef, it has its pros too. I have had an in-depth education from living with Sir A la Carte, that I have developed a nose and a palate for food that arguably I would never have had without him -and let me tell you, to my surprise as well as yours I’m sure- some of the best meals I’ve had are low fat, low carb and UNBELIEVABLY healthy.

Ok. So sometimes there’s an itch that can only be scratched by a big juicy greasy takeaway, I get that, and that’s fine -everything is fine in moderation but, I have to be honest, most of the time I actually crave the recipes that are veggie or vegan based just because of how fresh they taste and how great they make me feel.

Let’s start with salad. I am not talking about leaves on a plate. I’m not a rabbit. That’s a NO-GO. I mean, if you’re trying to turn over a new leaf (if you pardon the pun!), a bowl of green fibrous nothingness is hardly going to convince you to keep going is it?
Also- leaves like this have hardly any nutritional value…its almost as bad as eating cardboard… If you enjoy eating cardboard then please continue…but this post is not for you…This is for people like me who have a hunger for something that tastes good. Flavour God kind of level people! I mean please!
Got it? Yes? Ok. Let’s begin.
A chef friend of mine once told me that:…the best kind of salad is the one with the least amount of salad in it’.
Hilarious, I know, but he has a point. The best salads contain herbs, spices, a killer dressing and not a single piece of lettuce in sight. Throw your icebergs away Ladies…no one has time for that.
I use (anything that’s in the fridge really), but usually:
Now for KILLER DRESSING TIME that will seriously mega boost the flavour punch of your salad and make it taste like something naughty over something nice.
Recipe 1: Super easy basic lazy girl dressing
Olive Oil, White Wine Vinegar, Salt and Pepper
Mix them all together with a fork or whisk and hey presto. Simples.
Recipe 2: Chinese Flavours are INCREDIBLE on salad with coriander leaves and a sprinkle of cashew nuts and sesame seeds for extra protein and texture
Soy Sauce, Maple Syrup, Sesame Oil, Lime Juice, Fish Sauce, Vinegar
Recipe 3: This one is my ULTIMATE FAVOURITES, it makes my eyes pop its that good…and I’ve had it 3 times this last week already! It’s THAT GOOD. Promise.
Pineapple Juice, Soy Sauce, Maple Syrup, Sesame Oil, Salt + Pepper, Lime, Chilli, Vinegar
And OMG you have an amazing salad.
Add to that fish (tuna/salmon/mackerel), chicken, more nuts or have as a side dish to a veggie cottage pie, or lasagna or pesto pasta! I sometimes also add fruit like mango or pineapple which makes it even more ZINGY. MMM tasty. I might go have one now…
With these killer dressings salad really does not have to be boring and you can actually enjoy, for once, eating your greens!
